Skylark ... when I am shooting white birds in bright sunlight, I try to underexpose as much as possible, sometimes a full stop.. If you shoot at a normal exposure, the bright areas are not recoverable. I shoot in RAW, and play with the exposure before I open the file in PS CS... then, I work with the levels and shadow highlight to balance things out. Here is the data from my cam...
