IDing Images on Card as you take them

I know there's a way to tag your images on the memory card so they download as files rather than separate photos. I do sporting events and I'd like to have the photos go directly into each exhibitor's files. Is there a way to do this? Or do only certain camera bodies have this capability (I have the Canon 30D)?
Any insights would be greatly appreciated!

The closest I can think of would be using separate folders on the memory card. Every camera should be capable of doing that. Nikons have a short cut by holding the questinomark button while turning the camera on it advances the folder number by 1. But I don't think there's an easy way of actually selecting the folder.

When I do various panoramas I take photos of my hand holding up certain fingers to indicate the start and end of actual panoramas and separate it from test shots and the like which makes it really easy with viewing problems that show all the shots in chronological order.
