I've noticed that my baby girl's eye color will shift from light blue grey to dark brown depending on the viewing angle relative to the angle of incidence. More obliquely viewed, her eye color shifts brown. You can actually see this happening when she turns her head away from you. Likewise, under highly diffused light, her eye color is dark.

Does anyone know how this happens?

Read the Wikipedia entry on eye color; that has a lot of information that bears on this question.
Eye color is often changed by the differential absorption of various spectra by different layers, thus implying that the angle of viewing is important in 'seeing' color.
