my canvas in photoshop is exactly 8x10. when I print the picture, will the edges be cut out?

It depends how and where you are printing. If you take it to a place to print, no, it will be 8x10. If you're using your own printer, it would depend on your settings on the printer.

If you're using a professional print place, and have selected to correct dimension to be printed, as well as have your jpeg sized properly you should be all set.

How can you tell if the place you order it from does quality prints? I want the best of the best.
