Recent new upgrade... leads to more questions

These are questions about recording with my T2i, sorry if this isn't allowed.

I've been shooting for almost a year now and a few weeks ago I upgraded to the Canon T2i... Photo is of course my main focus, but as I now have an option for recording, I might as well take advantage of it for making videos with friends and recording edits for my other friends that ride bmx/skate.

I've got a bunch of questions that if they could be answered, would be awesome.... first, here's an example video, all shot by Bill Paladino, which I can base my general questions off of... YouTube - ‪DayToday Season 4 ep. 2‬‏

Auto exposure or manual? I think the videos are recorded with manual, as I hear the wheel on the camera being rolled as the lighting changes...
Auto focus or manual? I'm guessing manual focus as well for recording, saw in one video Bill holding his hand around the focus ring... auto focus takes a long time.
What's the best way to walk around while recording without bumps in the video from walking? Seems like I always have some..
Any other recording tips for videos like this would be awesome.
