Recompose

what does this achieve and I am not sure how to do it on my nikon 3200? Is this used for taking a photo of someone in the shade against a sunny background?

Typically, you'll recompose if you know the focus point or metered area chosen by the camera in the viewfinder aren't the ones you want to use. So you aim the camera where you need to to get the exposure or focus you want, then recompose (which 'holds' that setting if you keep half-pressing the shutter button) and take the shot.

It does. Metering has to do with bright light and shade.
