Settings Help, Photographing Inside Barns

I am going to be taking photographs at a huge poultry show this weekend and wanted to bring my new Nikon d5300. I'm very new to DSLRs, so I'm wondering what settings I should plan on using. I have the kit lens, and I'm assuming the lighting will be pretty good but not very bright and I CAN'T use flash. I am going to be taking portraits of the birds. Any tips or tricks? I'll have my iphone 5 as backup since it has done well in the past with shows

Here are some images that I've taken at previous shows with my iphone. This gives you an idea of what I'm dealing with. I just would like to be able to do this with my Nikon!
