I was printing a photo the other and I told the printer that I had sharpened it for Matte paper through Lightroom and she looked at me and said "that could mean anything" but I thought since I was printing to Matte that it seemed the right thing to do is it.
 
Yes, at least that's what seems to work best for me

If you give the final product to the printer this way without them doing any adjustment it should work out pretty good. You will notice that if you don't sharpen on export, the photo looks as it does in your develop panel, when you export sharpen for Matt, it looks on screen almost over sharpened when compared to how it looks in developing panel, however when printed it looks correct as per develop panel look.

At least this is my experience.

If the printer doesn't do photography and photography editing, you were speaking a language the printer doesn't know.

The printer likely uses RIP software that is included with their printing machines. RIP - Raster Image Processing.

Lightroom is a parametric image editor.
 
The Printer shop owner is a pro photographer of many years but he does operate the printing service but I always assumed that the person knows her onions as she does editing for him.
