Trying to figure this out

New to this, hence the name "Fresh Meat". I'm really trying to figure out how to change the shutter speed and other things manually on my Sony DSC-HX1 but I haven't been able to figure it out yet.

Anyways, Here are some of what I took today. Critique away.
These aren't posed shots. I love the way snapshots turn out they are more fun.

Aww, thanks y'all. These are the ones I think I've done the best on. I like these kind of pictures as opposed to posed, since you can't exactly POSE a hyper 1 year old.

1 is a bit overexposed, leading to a flat image.

5 would benefit greatly from a fill flash to bring out his face. In a lot of cases flash is more useful when taking pictures of people in bright light than it is in low light. Sounds crazy at first "why would i need a flash in the middle of the brightest part of the day?!" but it helps to even things out and pull shadows out of the subject's face. Especially anybody over the age of 30 without perfect 'kid smooth' skin.
