Got a late start today and the light was a bit harsh.

The light i harsh for sure. Next time , depending on your metering preference fire off a bracketed set +1,0,-1 and check the image/histogram, then adjust your EC as needed. Here is a good article about white birds... All About Birds : White Birds Exposed

I see detail in the whites so I think you can adjust levels in post to save them.
