Which of these is the best shot and why?

The lighting is challenging here because you're capturing mostly the deep shadow-side of the lizard. I think overall #3 has the little guy (or maybe it's a little gal) happens to catch the best lighting.

#3 happens to have a rule-of-thirds composition, but so does #2... but #2 (ignoring the lighting) has him facing out of the frame. When subjects look away or out of the frame it creates "tension" in the image. Usually tension is a bad thing in photography (but there will always be those exceptions.)

Number three. Good composition, enough surroundings to tell a story, but you can still clearly identify the subject.

I like #3 as well. The subject is in focus enough to get the detail necessary. The lighting and position is also best - puts the subject in perspective better than the rest.
