This pretty much invalidates quite a bit of your argument. No one is advocating one format is better than the other; simply that one affords a much looser rule set than the other.
For a lot of people SOOC shots are simply NOT part of their work flow. Some individuals shoot with the express purpose of bringing the final product INTO an image editing program to add their special-sauce. Shooting in RAW is not about "Oh hell I'll worry about it later" (since even RAW has its limitations). It's simply about having the FREEDOM to do that, should one need to.
RAW handling has come a long way, and the "difficulty" of editing a RAW file shouldn't be a concern in this age of one-click file corrections.
