Sorry if this is a dumb question. Is there any visual difference between shooting your images in B&W and converting them later through editing?

You'll have more flexibility if you just shoot in RAW and adjust everything to your liking (including B&W) afterwards. That being said, even shooting in color JPG and then adjusting to B&W will yield more flexibility because you can adjust how the B&W conversion is done more specifically in PP than your camera does if you shoot in B&W

Agreed, although it might just seem black and white, to do a good conversion, you want to be able to play around with the color channels and get a nice tonal range in the finished product.
