The first one works for me. may need a bit more focus on the knot.

The other two...

#2 the curves lead me off the page.
#3 boring. I hate to sound so brutal. Nothings going on, it's centered, and nothing makes me want to stay.

The first is so much better because you are using the rule of thirds, your knot is (somewhat) the focal point, and you have some angled lines leading your eye.
