So I was reading the interval shooting on the manual and it mentioned that the camera will not fire until it finds something to focus. The problem is, if I am doing time lapse of night scene or stars, it's usually so dark that the AF won't focus. I always manually focus on occasions like this. How would I do interval shooting then?

I think that the manual says that the camera will not fire if AutoFocus is set. In manual focus will work, there is no need to find something in focus then.

Set it manual, focus on infinity, f11, and play with iso 400 and go up to 1600. You might also want to play with exposure compensation
