Do better bodies produce better images?

Up to an 8x10 at ISOs of less than 400 there isn't any significant difference in IQ between all 8mp and up, dSLR cameras.

8MP? Heck, 8x10's look great out of my 6MP D40. I made one particular 8x10 from a photo shot at ISO 1600 and it still looks great. Sure you can see grain/noise, but it's a concert photo, so it provides character.
