First Picture

I would have said that the saturation was fine in the first one, and if anything, it's already a little too much. Playing about with the contrast with either the Levels or Curves tool in photoshop can give the impression of more vivid colour without giving the unnatural look that big changes in saturation brings in.
I think it's a great first image, and although the scene may be that tilted, I'd still consider straightening it. The road provides a nice leading line, and the cropped version gives a nice composition.
 
Saturation and white balance are off on the shot. Or look that way anyway. The horizon is centered in the image. When doing landscape shots try to get the horizon at the top or bottom third of the image depending on the focus. This is part of the rule of thirds. Do a search on google and you will find a ton of info on the rule of thirds. That second edit is WAY over saturated for sure.
