the only think I'm missing overall is the environment in the photo. it's just a hawk which doesn't grab me

IMO:
#2 is my fav of the three. Maybe not quite such a close crop though.
Something similar to this (this is just a quick paint crop as I don't have any other software on this PC...)

Instead of cropping it and leaving it centered, how about putting the birdy to the right so it is looking into the dead space.

Personally, I thought your crop on image #1 is perfect.
#2 looks good, because, again, you left spoace for the bird to look into.
