How to make the most of my focus points?

For people, I focus and recompose. Usually have the focus point placed to one side or the other of the frame. If light is poor then go to the cross type focus point. Always use the AF-ON button to activate auto-focus. The one time I tried out the Df body the first change I made was to put the auto-focus only to the AF-ON button.
 
This may or may not be of any use, but since you're talking about basically being in a studio situation, my suggestion would be to set your aperture to where you want it and simply switch to manual focus for static subjects. Zoom in (on your rear display) and fine tune your focus.
 
Another thing, depending on how good your sight is, you can always make heavy use of the DoF preview button and then manual focus. This is what I usually do if for some reason I have a very shallow DoF and there isn't a cross type AF point nearby to where I want the focus to be. I use the autofocus to get in the ballpark with focus and recompose, get it composed how I like, turn on manual focus and DoF preview and fine tune the focus by eye.

As others have said, one you go BBF, you never go back.
