You can also just go:

Colors>Hue-Saturation then adjust the saturation slider to "0"?

Not sure if that would yield the same results that Cuervo posted.

With channel mixer you have a measure of control of the contrast by adjusting each channel, which is what a black and white image is all about, contrast. For further refinement of the image a lot of artist use dodge and burn techniques to highlight or diminish parts of the image.

Taking the saturation to -100 gets rid of the color but does nothing for the contrast.
