What's the difference? For example, if I am adding copyright info/captions/credit info via the 'File Info' tab in Photoshop, am I using the MetaData part of the image file?

It'a all metadata, there is no essential difference.

Metadata literally means data - about data.

Camera information is recorded in the EXIF fields, the IPTC fields are just a separate metadata section that must be completed by the photographer.
