Kite Surfing and Skateboarding.

First time posting on this forum.
I shoot with a canon rebel xs and a 75-300mm for most of these pics. anyway thought id share what i've taken so far.

Kite surfing pictures make me mad. i find the camera focusing on the water or mountains in the background instead of on the person. anyone know why this is happening? i usually shoot in P mode with AI Focus and a high shutter speed. what can i change so that it always focuses on the surfer?

In pic 1 I like the fact that you can see the chute in the bg, that's cool. Why shoot in program mode ? I shoot in manual, and fire a couple test shots to get the ambient light I want. What auto focus modes do you have ? Wide or narrow that kind of thing ?
