Cheers Brian, I generally under expose by about 0.3-0.6 of a stop to safeguard highlight detail, and then just increase the fill-light slider in lightroom to lift the shadows + increase overall exposure a bit.

One tip, when you underexpose, remember to lower the ISO, not the aperture or the shutter speed, lowering ISO further decreases the loss of dynamic range.
