That is the problem of using a reverse ring.
One of my friend suggested this: while you take out lens from the camera select a desired aperture and take it out pressing the DOF button, keeping the camera switched on; the lens will retain the selected aperture giving better DOF. If you take it out in switched off status, you get the widest aperture with lowest DOF by default; anybody please correct me if i am wrongly informed

Yes, with the EOS line, the only way (that I know of) to stop the lens down without it being mounted is to remove it with the DOF preview button held down. Just re-mount the lens to reset the aperture blades.That is the problem of using a reverse ring.
