Go for the D700 and rent a couple of good lenses for the wedding, like the 24-70 f/2.8 and the 70-200 f2.8 VR

Oh? How so? DX lenses work just fine for me on my D3.

They "work" but get cropped down to about 5mp...which is like you shot it with a D40!

D700 is a little more then 1 stop better in low light. That might not sound like much but keep in mind that being just one stop better is "twice as good"

Personally I so think that the d700 is currently overpriced, heck I paid less for mine nearly two years ago, that is unheard of in electronics!
