No-knead bread is a method of bread baking that uses a very long rising time instead of kneading to form the gluten strands that give the bread its texture. It is characterized by a low yeast content and a very wet dough. Some recipes improve the quality of the crust by baking the bread in a Dutch oven or other covered vessel.

BTW - I used all purpose flour and 1 5/8 cups of water, next time I'll use 1 3/4 cups to increase the size of the "bubbles"..

Also turned the dough ball out on lightly floured parchment paper. This keeps the dough from sticking to the bowl during the second rise and it slides right off the paper into the hot pot.

Mmmmmmmm .... cold day today, wish I had hot bread coming out of the oven.
 
The second photo is just to much for me. Off to lunch in 5 minutes.
