That's quite the difference. The first photo is pretty standard as far as wild animal shots go. The second is cool because it's not something you see very often in nature shots. I'm not sure if it adds to the shot or not though. It almost makes it too 'fake'. I'd really like to see splotches of green around the deer still in color, not just the deer in color. If you could make it look like you're painting the color into the photo, rather than the strict removal I think it'd look really cool.
Also depending on what camera you're using, if you can crop out some of the extra areas it might be better. Getting in closer on the animal to bring more attention to it.
