Panasonic FZ18 - Manual white balance adjustment

Hi

I'm on a beginner's photography course and this week we covered white balance.

I want to learn how to pre-set my white balance but can't understand how the instruction manual is telling me to do it.

I want to aim my camera at a white piece of paper and tell it to take the white balance reading from there; so that the camera adjusts for me taking photo's under red lighting.
