Seperate colours in photoshop

For example if I took a pic of a orange and a green apple, on a bright red surface. Is there a way of dimming the red and adding more colour to the orange only?

Absolutely, not a problem at all. Use a Hue/Saturation adjustment layer and tweak to your heart's desire. You may have to use some masking to separate the orange and red because they're related, but it's still no big deal.

Just a new adjustment layer. It won't change the image itself, just the way it looks, like putting a filter over it.
