All I can say is that from personal experience, infinity-corrected adapters suck. A lot. So while Nikon to Canon, iirc, is possible, the other way around is problematic, AF or no AF, unless you like shooting everything at f:8.

Part of that problem is the costs - most of the infinity adaptors I've seen are made cheaply and cater to the cheaper market; thus the optics they use are low grade. There shouldn't be any reason why a highgrade option would result in significant degradation of optical quality (just look at teleconverters or good quality close up lens attachments; both of which able to add glass without hardly affecting image quality). Also I recall canon made a very few infinity correcting adaptors for when they changed to the EOS mount - though they were very few and hard to find (and sell for a high price when they are found).

As far as lens diaphragms: all Nikon lenses use a mechanical lever to open and close the lens diaphragm.

Not quite all. The PC-E Nikkors don't use any mechanical connection.
