Pinhole doesn't have "focus" to work on. . The pinhole image is always "in focus", but never truly sharp. You can work on the sharpness; smaller pinhole and, OK, bigger distance from the hole to the negative. (That will off course affect the angle of view.)

Bellows, as timor says, will mainly effect field of view. Also, of course, effective f-stop. The C cameras should give you some nice control with their crazy long bellows, just be sure to increase exposure as you rack out.

The camera might even have a calculator you can use with a little thought. Possibly it doesn't matter as you're in the land of reciprocity failure anyways.
