For me it's 2500-3000 digital photos for an 8hr wedding,

I know this is off thread, but the thought off culling/editing that many images seems like a daunting task. Multiple that by several in a month, and the task seems more than one could handle. Out of that number how many might go to further editing?

I'd say final delivery is about 800 for an 8hrs wedding.

Wow, even with the reduced number I'm still amazed. At just 5 mins per image to edit that's still almost 70 hrs. Either you've successfully standardized your process from shot to finish such that you can utilize batch processing, or there's more then just you in the back office.
