Sometimes I use a monochrome setting on the camera and sometimes I edit out the colour - technically which is better?

second and third are very nice; fourth would have been classic provided, it gives the feeling that he is smoking; but in the first look i thought some wrong processing; if the smoke had spread out in a different way, the shot would have been better, i feel

Regards :D

You'll have more control over the end result doing it in PP.

The only real advantage doing it via camera settings has is that it's faster.
The results may not be as good as they could be though...

+1 - If possible, always shoot in RAW. This way you have most control over your images for post process.

I do not have photoshop - what else can I get for Mac that will let me edit raw?

EXIF data for your image says you are shooting with a Canon EOS 500D. Just curious, didn't your camera come bundled with a RAW editing software such as "Canon Digital Photo Professional" or something on the similar lines ?

I was able to locate the "Updater" for Canon Digital Photo Professional from their website
Canon U.S.A. : Support & Drivers : EOS Rebel T1i

The above is just an updater and will only work if you have the previous version installed, Which I think should be in one of those software CDs bundled with the camera. ( Yes ,it works on a mac ).

At the above link, Once you choose your operating system, it'll display a list of all supported Canon Software.

I'm a Nikon user and I work on a PC, so MAC experts will be able to provide you more info regarding other mac specific software for RAW editing.

Cheers
