Do I need to adjust the diopter for every lens?

Interesting... I've never pondered that question before... but:

You should NOT have to refocus the diopter once it's been adjusted correctly for you the first time, with any lens. This "adjustment" is for your eyes, not your lens... ;)

I thought that too, but then I put on another lens and it seems a bit different

You don't even need a lens on the camera to adjust the diopter.

Just use the focus point indicators in the viewfinder display, and the other displayed viewfinder information.

When those are in sharp focus the diopter is properly adjusted for your eye.
