Canon S95 custom white ballance help

I am confused by the instuction- using the camera underwater, i set the shortcut, then shot at a piece of white plastic- the tint turned green. i changed the setting back ro auto white ballance, and the shots were great. i was very shallow- and would like to know how to change the white ballance at diff. depths.
