How could i have composed these to make them a little more interesting?

For #1, I would have squatted down and shot from a lower level. #2 ... probably wouldn't have shot it with the people in the background but behind the boat with the water in the background.
 
^^ yes, and I would crop some foreground in #1 - it's not that interesting.
 
#1: Might have zoomed in more or gotten closer...without getting hit..LOL

#2: Shoot toward the water or with more background blur so the people weren't so recoginizable.

i kinda liked the leading lines of the track. maybe if i cropped out the sides and did a portrait view?

getting rid of the people wasn't so easy since even in the water it was the swim area so people everywhere. shorter depth of field is a very good suggestion though!

It's all a matter of taste, so what makes you happy is what counts. For me, leading lines are important, but when they take up a large portion of the image they don't work as well. Try some different crops and see how you feel about them.

Your leading lines are essentially just straight vertical lines.

Diagonal lines convey a greater sense of motion. Had you made the photo from much further left or right, the tracks would be on a diagonal; in the frame.

It also helps if your leading lines lead to the dominant or main element in your image. Here the buildings are the main element in the photo, not the street cars.

I cropped using the rule of thirds:
