Good work! You captured some good texture in addition to the interesting lighting.

I haven't shot eggs since a color photography course a long time ago where one of the assignments was to shoot an entirely white scene with different kinds of lighting. Sometimes an essentially black and white subject is interesting in color because there are some subtle colors there and the viewer often thinks it's in black and white on first glance, then notices (sometimes) that it isn't.
