How do I achieve this type of look in photoshop?

What is it that you like or what more specifically is your question? How to achieve that lighting? Like which strobes to buy or how to set them up.. be a little more specific?

well...i like the grittiness of the photo, its real sharp looking. just wanted to know how i can get my photos to have a similar style of setting (color, sharpness, etc.)

Well use a small aperture, like f/11.
Get some lights or strobes, play a little with them so that you have a similar light.
After you take the photos increase the contrast, and maybe the saturation, and play a little with the color balance too.

On a Nikon D300 it would be the VIVID setting to get the colors. I have no idea in Photoshop.

Crank up the contrast. Add Noise. Oversaturate.

But before you ever get to PS, just stand someone too close to a background and use harsh direct strobes.

Also grab some gels, it will change the strobes and umbrellas doing some of the oversaturating for you.
