How is this done?

How do these shots get made? Are they shooting photos or video? If they are shooting photos how many do you think they are taking per shot? How do they get the smooth rolling across the landscape?

Time lapsed, on a slow moving track?

The track is one thing, that you might easily make. But to get smooth time lapse shots, you need something to move the camera through the track in short and precise moves. If you try moving the camera on the track by hand the video will end up very shaky, so it is best to have an engine and some brains to control the movements. I guess you can do this too if you have some skills in electronics.

You can also buy motorized camera slider rails. Good ones are $600+ though.
