True, but I've seen them catch a slender twig on a high perch and sit there for hours...they're are surprisingly agile for a bird with such a large wing spread. Great Blues can do the same thing. I

I generally use a spot meter for white birds but they reflect so much light and have so many agles, sometimes it just comes down to dumb luck. I tend to under by about a 1/2 stop with a +1 EV and find that helps immensely.
