You need the speed ring for the soft box. In a sense, it's actually part of the soft box.

Use the reflector (with the hole on top) when using an umbrella. The "stem" of the umbrella passes through the hole.

Just got my digi bee package last week. Love them, still workin on setting up my home studio, can't wait to really get going.

I too am having trouble figuring outwhat I am gonna do with hair and background lighting.

Nice set up Bethany, those are the bigger "B's" correct. As far as the noise in your pictures, your ISO was set at 320 which is a little high, with your aperture at 2.0 you should be able to lower that to 100 or so, that may help with the noise.
