Is shooting the sun damaging to my camera sensor?

towards, no. Don't stare at the sun through the lens (think about burning your retina or sensor for a delayed period of time) but in the direction, some glare in the lens, no problem.

I have a mirrorless camera so it has an EVF which only gets as bright as the pixels allow so no chance of blinding myself but I was concerned about the sensor. Equally has been my apprehension with changing lenses with the camera on in bright daylight since the sensor would be fully exposed.

Is this logical thinking or does the sensor protect itself from being over loaded?

From my understanding, focusing on the sun is not a good idea. Changing a lens is definitely no issue. It's focusing direct sunlight through the lens that could be.

If you hold the camera down to change the lens, you won't have any problem and it will also help to not get dust inside.

1st. There are shutter curtains in front of the image sensor in the NEX-7 that would be closed when you change a lens.
From the NEX-7 shutter specifications - Electronically controlled, vertical traverse, focal-plane shutter.

2nd. No. An image sensor will not protect itself from being overloaded. What results is called 'blooming' and is a large group of pixels that become fully saturated. Blooming does not damage the image sensor.
However, if for some reason one was doing a long exposure with the Sun in the image fram,e at some point the image sensor and other electronics in the camera can be overheated to failure.
