OK, and yes, you don't want to change the lens aperture because that would effect the DoF, and you don't want to change the ISO.

How did you decide what shutter speeds to use?

Many people think that -1 EV, 0, +1 EV, or -2 EV, 0, +2 EV is all they need to do, when the dynamic range in the scene really requires something like -1 EV, 0, +3 EV.

As suggested, the scene may require more than 3 exposures.

Until you quantify the total dynamic range in the scene by Spot metering it in the brightest, darkest, and perhaps several other places, how many EV steps and EV step values you use are just guesswork.

In short there is a lot more technical pre-shooting work that has to be done than many attempting HDR realize.

neither are great images for hdr.

We wouldn't be able to know this without seeing the middle exposure. To me, it would seem a great scene to practice with. Very bright sky, house in the middle and dark trees and landscape.
 
The house alone has several values of EV. The upper house walls are much brighter than the recesses under eaves and the porch/deck.
