Im finding it hard to believe you have a hard time with the WB if you set it to flash WB and make sure you have no ambient light with your exposure. Are you mixing 2 lights maybe?

Foamed polystyrene ("Styrofoam") plates and cups are very accurate white targets if there's a UV filter somewhere in front of the sensor - better than many more expensive, commercial ones. Look for the flattest curve of all of these:
