#1 I think I would have preferred with greater DoF, #2 looks over-processed to me, and #3 looks both over-processed and off-centre with the large, relatively empty area image left.

I agree that both #2 and #3 are over-processed, I'm glad you pointed that out. I'm slowly getting my feet wet with Photoshop and more often than not I don't know what I'm doing or if the end result is still realistic or already science fiction

Regarding composition of #3, I also agree. Here's a crop (I'm not fond of squarish images, but it was the best I could do to try and salvage this one):
