Wrestling picture camera/lens advise

Hello,
I’m taking wrestling pictures for my son’s team and my current gear is not equipped for the wrestling environment (Canon EOS 7D with a Canon 85mm f/1.8 USM Lens). I was looking into upgrading to the following cameras and lenses and would love your feedback.

Canon EOS 6D Mark II
or
Canon EOS R10

Used:
Canon EF 70-200mm f/2.8L USM
or
Canon EF 70-200mm f/2.8L IS II USM

How crucial would the Image Stabilization (IS) be – I would use a tri-pod.

How close to the mats are you?
 
The camera body you have should be good with the right lens.

Image stabilization, IMHO, is most important when you use the screen and have your arms stretched out to get the shot. Holding the camera "the old fashioned" way and using the viewfinder will largely negate the need for image stabilization.

I would also ask how close you will be able to set up? While 200 may be enough, you may need more.

The Canon 55-250 EF-S STM Lens would probably work very well. It has image stabilization and also the STM motor for video.
