Not a bad start; try bringing the light in closer, dropping the power and adding more diffusion. That will increase the 'wrap' of the light and reduce the specularity.

Thanks tirediron, not sure whether that means I'm going in the right direction. I was quite tight to the pepper bouncing of a foam board using the built in diffuser. Aiming slightly up topped with another foam board. Think I also tweaked the power down.

I'll try again diffusing more and try reflecting some fill.
