Welcome to TPF.
Shooting in harsh sunlight is difficult at best but, with some editing, these can look quite nice.

The important thing is to be aware of the characteristics of good shots, then look where your images come up short - and fix that.

Here the eye sockets are shadowed and the entire background is brighter than the faces; neither of those is desirable.
A quick fix (would be better on original raw images) and it changed the picture.

That makes sense thanks. Do you have any good tips on how to do selective editing like the light you're suggesting? I use Lightroom mainly.

there are no tips per se,
IMO, the most important thing is not how to do something but developing the eye to look at your pictures objectively and see where they fall short.
Then learning how to 'fix' that, either in shooting or PPing is simply mechanics.
