It's easy to lose track of the image as a whole when one aspect appeals very strongly. When you're done processing, look at the image carefully and look for white things that aren't white (eg clouds) and make them white again.
Sometimes learning the basics from the pre-digital photography books is the best way. The basics are the same even if the equipment isn't. Keep posting.
