Man giving tour of the maple syrup process. Not sure about the crop. Was thinking of going tighter but then you lose some of the gestures and background. Thoughts?

I think that , in the first two, the background isn't helpful and you've lost so much of the hand as to make the gesture undefined.
Perhaps #3 first to show the situation and then a more tightly cropped 1 or 2 to give a better look at the face and character. (prefer 1 because he is looking into the frame and he is talking which echoes #3.

And maybe burn in his face a bit.

That doesn't seem flat to you?

Nope. I see even light on both sides of his face, but the wrinkles in his skin are well defined and there's a distinct shadow area on the [camera] left side of his face.

Would you say it's a matter of opinion or rather a technical flaw?

I can see where hit highlights is technically wrong but I also like the harshness the contrast.

It's definitely a matter of opinion; there's really not a lot of 'right' or 'wrong' in photography other than missed focus and cropped limbs. At the end of the day, it's your image, and the way you like it is the right way.
